Unfortunately, while the majority of the work was acceptable, there were numerous errors left and those raised with Johnny he has not taken responsibility to fix. Examples: architraves fitted 2cm away from the wall, neighbours roof leaking adjacent to work carried out, a cooker hood "attached" to the wall by a piece of wood balanced on an electrical socket (which has now ripped the socket from the wall), plus more. During the work we also suffered multiple delays due to electricians not showing up and were repeatedly told that issues raised were "changes" and were billed extra to fix them.

I am very surprised to hear this.
After a thorough sign off meeting and agreed snag list I personally undertook, you expressed how happy you were with the work done.
I’m confused you feel this way, as you know I’m always available. I was completely unaware of any issues, if you'd let me know I could have come around to take a look as I always do with my customers.
As far as I know I’ve taken full responsibility for the job in hand, I have always communicated with you at every opportunity.
In regards to the neighbors, I offered to come around and take a look but you didn’t get back to me. I explained the leaks could not have been caused by the work we did as we didn’t ever intrude into your neighbors property.
In regards to the electricians, there were no extra charges without your knowledge, they were on time and did the job they were booked to do. We unfortunately had to redo all the electrics which weren't on the initial quote which required additional work and scheduling. We only charged you for work which had been agreed and signed off by you.
